Tomato or Coconut Curry


This is a recipe from a friend:

Marinate:
  • 1lb chicken, cubes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp lemon juice
  • 1 heap tsp garlic
  • 1 heap tsp ginger
Marinade for half hour

In a pot:
  • Sear chicken until golden brown. Does not need to be fully cooked. Once golden brown, set aside.
Then to pot, add:
  • 3 tbsp Oil
  • 2 tsp rye seeds
  • 2 tsp cumin seeds
  • 6 - 8 curry leaves
  • 4 - 5 Whole dried red chillies
Once fragrant, add:
  • 1 onion (thinly sliced), once brown continue:
  • 1 tsp red chilli powder
  • 1/2 tsp tumeric
  • 1 1/2 cup tomato puree or 1 can coconut milk
  • Add chicken back
  • Add water if too thick
Cover and let simmer until chicken is cooked
  • Add salt to taste
  • Add tamarind chutney
  • Add 1 tsp symbol oelek 
Serve with basmati rice.

This tastes equally good with crushed tomato or coconut milk. 
Both are very different but delicious!
