Masala Blends (There are more than 5)
*For all masalas, adjust spice level as these are a bit mild.. Try them first.
Garam Masala
- 1 Jaifil (nutmeg seed inner part remove peel)
- 1 tbsp javantri (mace leaves)
- 1/2 cup cumin seeds (regular ones)
- 12 small elaichi (green with skin)
- 12 big elaichi (black with skin)
- 10 cinnamon sticks (1 inch each)
- 2 tbsp or 1/4th cup cloves
- 1/4th cup (3-4 tbsp) black pepper
grind into a fine powder
Pasanday Masala
- 2 tbsp Kashmiri chill powder (long dry chilli)
- 2 tbsp chilli powder
- 1 tbsp salt
- 1/2 tsp citric acid (preservative)
Roast & Grind into a powder:
- 1/2 cup besan (roasted)
- 12 small elaichi (green with skin)
- 1 tbsp cloves
- 1 tbsp javantri (mace)
- 8 sticks cinnamon
- 2 tbsp regularcumin seeds
- 1 tbsp poppy seeds OR unsalted cashew
- 1 tbsp black pepper
Mix all ingredients
Karahi Masala
Roast & grind into a powder:
- 4 tbsp whole coriander seeds
- 2 tbsp whole cumin seeds
- 1 tbsp maithi
- 1 tbsp black pepper
- 1 tbsp Kashmiri red chilli powder
Mix with above:
- 1 tbsp red chilli powder
- 1/2 tsp citric acid (preservative)
- 1 tbsp salt
- 1 tbsp garam masala
- 1 tsp haldi
Achari Masala
Roast & Grind coarsely:
- 2 tbsp regular cumin seeds
- 1 tbsp maithi
- 2 tbsp kalonji
- 2 tbsp whole coriander seeds
- 2 tbsp rye
- 4 tbsp fennel seeds (saunf)
Mix with above:
- 1 tsp Citric acid (preservative)
- 1 tsp garam masala
- 1 tsp halid
- 1 tbsp salt
- 5 tbsp red crushed chilis flakes
Korma Masala
Roast & grind into a powder:
- 1 nutmeg (seed)
- 4 tbsp whole coriander seeds
- 2 tbsp fennel seeds (saunf)
- 1 tbsp regular cumin seeds
- 1 tbsp whole black pepper
- 7 jawantri (mace) (flakes/ leaves.. not sure what to call it)
- 5 sticks cinnamon
- 15 small elaichi (green with skin)
- 5 big elaichi (black with skin)
- 1 tbsp cloves (about 15 cloves)
Mix with:
- 1 tbsp salt
- 3 tbsp Kashmiri chilli powder
- 2 tbsp red chilli powder
- Add pieces of bay leaf (1 large or 4-5 smaller ones)
Bihari Masala
Roast & Grind into a powder:
- 4 tbsp roasted chana
- 4 tbsp kashmiri chillies
- 2 tbsp coriander seeds
- 2 tbsp poppy seeds or 15 unsalted cashews
- 1 nutmeg (seed)
- 2 pieces jawantri (mace) or 1 tsp ground
Mix with above:
- 4 tbsp red chilli powder
- 1 tbsp meat tenderizer
- 1 tbsp salt
- 1 tbsp garam masala
- 1 tsp citric acid (preservative)
Nihari Masala
Roast & Grind into a powder:
- 1 tbsp black cumin seeds
- 1 tbsp regular cumin seeds
- 3 tbsp fennel seeds (saunf)
- 1 tbsp cloves
- 1 nutmeg seed
- 5 javantri (mace leaves)
- 1 tbsp whole black pepper
- 12 small elaichi (green with skin)
- 4 pieces cinnamon
- 3 star anis
- 3 big elaichi (black)
- 2 bay leaves
Mix with above:
- 4 tbsp kashmiri chilli powder
- 3 tbsp red chilli powder
- 1 tbsp ginger powder
- 1 tbsp salt
- 1/2 tsp citric acid (preservative)
Tandoori Masala
- 1 tbsp salt
- 1 tbsp garam masala
- 2 tbsp red chilli powder
- 2 tbsp kashmiri chilli powder
- 1/2 tsp citric acid (preservative)
- 1/4 tsp tandoori colour
Roast & Grind into a powder:
- 2 tbsp coriander seeds
- 2 tbsp fennel seeds
- 1 tbsp cumin seeds
Mix with powder masala
Biriyani Masala
- 1 nutmeg
- 4-5 pieces javantri (mace)
- 1 tsp black cumin seeds
- 1 tsp cloves
- 4 star anis
- 4 sticks cinnamon
- 1 tsp black pepper
- 4 tbsp kashmiri chilli powder
- 2 tbsp red chilli powder
- 4 tbsp coriander seed
- 2 tsp haldi
- 15 small elaichi (green with skin)
- 1 tbsp salt
