Take a little looka at my Shakshuka
In a frying pan on medium/high heat add:
- 2 tbsp olive oil
- 1 medium onion diced
- 1 1/2 tsp Salt
- 1 tsp Garlic/ ginger paste (Optional.. still very good without it.. adding it because why not?)
- 1/2 tsp Red chilli powder
- 1 tsp Paprika
- 1/2 tsp tumeric
- 1 1/2 tsp cumin
- 1/2 tsp pepper
- 1 1/2 cups diced peppers (any and all you want - bell perppers/ jalapeƱo etc. seeded or unseeded up to you see below first)
Toast Onion, garlic/ginger, spices and peppers then add:
- 1/2 jar of tomato puree or even chopped tomatoes (5-4 medium) or a combo of both
- Add water a few tbsp and cook for a little bit (until eggs are ready to add in). add enough water so its a bit saucy/runny as the sauce reduce after we add eggs
- Taste seasonings & adjust
Once good with the taste, use your utensil to create an indent in the sauce for the eggs
- Add cracked eggs on top. (Ideally crack in a bowl & then pour onto ident)
- Once all eggs are in, add:
- Salt/pepper on top of egg
- Chilli flakes (optional)
Cover pan with lid and cook on medium/low heat
Once eggs are cooked (tap with ur utensil once firm and only a little jiggly on top) turn off heat. Remaining heat will cook it through
Once off heat, add:
- Chopped cilantro on top
- Feta cheese
- chopped green onions (optional)
