Biryani (With Pre-made Masala)

Meat masala

In a pot start frying:

  • 3 large onions

Cook until onions are about to turn golden brown, then add:

  • 3 tbsp (heap) garlic/ginger paste
  • 3 large tomatoes
  • 2 1/2 tbsp masala mix (HOPEFULLY ITS HOMEMADE - See recipe)
    • Taste masala & add red chilli powder & salt as needed
  • 1 3/4 lb meat (i used mutton with bone)

Cook for a bit until meat is about half cooked. 

    • While meat is cooking, prepare POTATOES (OPTIONAL)
      • Cut 3 medium potatoes into quarters and fry & golden brown. 
      • Once golden brown, remove from oil & set aside

Add about 1 cup of water to prevent from sticking & continue cooking and evaporate the water

Once water has reduced add:

  • 3/4 container of yogurt
  • 2 green chilli
  • 6-10 Aloo bukharay
  • 1 tbsp garam masala
  • Add potatoes into meat mixture

Cook until meat is tender & water has reduced to a thick consistency 


While meat is cooking prepare rice:

Rice

soak rice for 20-30 min

Bring pot of water to boil

Add

  • 3 cups of rice (rice is about doubled the meat in lbs)
  • 2 -3 tsp salt

Cook rice half done and drain


Once rice & meat is ready..

Prepare Layers

  • Oil base of pot
  • Layer 3/4 of rice 
  • Put meat 
  • Top with sliced tomatoes (optional) 
  • Add fried onions (optional)
  • Add fresh chopped mint & cilantro
  • Top with remaining rice
  • Add to top of rice:
    • Fried onions
    • Milk/kevra mixture 
    • Food colouring / or add saffron to milk and Kevra mixture to add the colour

Bake or cook on stop top until rice is done



Raita/Kuchumbar Prep:

  • 2 small Onions (Red or yellow - up to you)
  • 1/2 - 1 cup plain yogurt
  • Salt to taste
  • 1 - 2tsp zeera seeds (lightly crushed)
  • Optional ingredients to add: 
    • Mint
    • Coriander
    • Cucumber
    • Tomato
