Turkish Eggs
Yogurt mix
In a bowl mix:
- 1 cup labneh or plain yogurt
- 1/4 tsp cumin powder
- Salt
- Pepper to taste
- 1 clove garlic minced (optional)
Set aside
Poach eggs
- Crack eggs onto mesh strainer over a small bowl (to strain out excess egg white)
- Bring pot of water to boil
- Add 1 - 2 tbsp of white vinegar
- Once simmering create a vortex in the water with your spoon
- Pour egg into the centre of your vortex
- Cook for 3 min (until egg whites are firm)
Plating:
- Layer 2-3 tbsp of yogurt mix onto plate
- Add egg on top
- Drizzle chili oil over egg/ yogurt
- optional: top with herb (dill or coriander)
