Turkish Eggs



Yogurt mix

In a bowl mix:

  • 1 cup labneh or plain yogurt
  • 1/4 tsp cumin powder
  • Salt
  • Pepper to taste
  • 1 clove garlic minced (optional)

Set aside


Poach eggs

  • Crack eggs onto mesh strainer over a small bowl (to strain out excess egg white)
  • Bring pot of water to boil
  • Add 1 - 2 tbsp of white vinegar
  • Once simmering create a vortex in the water with your spoon
  • Pour egg into the centre of your vortex 
  • Cook for 3 min (until egg whites are firm)


Plating:

  • Layer 2-3 tbsp of yogurt mix onto plate
  • Add egg on top
  • Drizzle chili oil over egg/ yogurt
  • optional: top with herb (dill or coriander)
