Chili with Cornbread
Chili
In a pot add:
- 3 tbsp oil
- 1 medium onion
- 1 lb ground beef
- 1 tsp
Cook until beef is brown, then add:
- 1 tbsp flour
- 1 jalapeno diced
- 1/2 green onion diced
- 2 tsp garlic/ginger minced
- 1/2 tsp chilli powder (can add more to your liking)
- 2 tsp cumin powder
- 2 tsp black pepper
- 2 tsp smoked paprika
- 1 tsp dried oregano
Cook a few minutes then add:
- 1 can tomato puree
- 1 tomato diced
- 1 can full of water
Cook for 30 minutes then add
- 1 can kidney beans (I soaked 1/2 cup of beans the night before and cooked them the next day.. I think it amounted to 1 can)
Cook for another 30 min and the chili is done
Cornbread:
In a bowl Mix:
- 2/3 cup all purpose flour
- 1/2 cup corn meal
- 1/3 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup cheddar cheese
- 1 egg
- 2/3 cup milk (really 1/3 is for muffin mix but more Is required for this recipe)
Assembly
Pour chili In a baking dish
Pour over cornbread batter
Top with another 1/4 cup cheddar cheese
Bake until cornbread is cooked
