T&T - BBQ Beef (Slow Cooker & Pressure Cooker variation)

Rub Mix:

  • 1 tbsp brown sugar (sub white)
  • 2 tsp paprika
  • 1 tsp garlic powder (sub 1 tsp fresh garlic)
  • 1 tsp onion powder (sub garlic powder)
  • 1/2 tsp cumin powder
  • 3/4 tsp yellow mustard powder (if using Dijon mustard, rub the wet mustard on the meat before the rub)
  • 1 tsp salt
  • 1/2 tsp black pepper

BBQ Sauce:

  • 2 garlic cloves , minced (sub 2 tsp powder)
  • 1/2 cup apple cider vinegar (Note 2 subs)
  • 1 - 1 1/2 cups ketchup , or Aussie tomato sauce
  • 1/2 cup brown sugar , loosely packed (ie don't pack it tight)(sub white)
  • 2 tsp EACH
    • black pepper
    • onion powder
    • mustard powder (Note 2)
  • 1 tsp cayenne pepper (adjust to taste re: spiciness)
  • 1 tbsp Worcestershire sauce (sub soy sauce - what I always do)
  • 1-2 cups water (depending on slow cooker vs pressure cooker)

I’ve made this with Beef Brisket in a slower cooker:

  • Rub the spice mix on the beef brisket
  • Add to slow cooker 
  • Add bb1 sauce mix
  • Cook for 8-20 hours or until cooked through
  • Remove brisket and drizzle with oil and roast for 15 min in 390f oven
  • Transfer sauce into a saucepan and cook down to desired thickness


Pressure cooker

  • Rub meat with spice mix
  • Transfer to pressure cooker
  • Add BBQ Sauce
  • Add a little bit of water (about 1 cup)
  • Close pressure cooker and cook on medium high heat until it begins to whistle 
  • Once steam is releasing, lower heat to medium low and cook for 20 min
  • Once done, release pressure slowly 
  • Remove meat
  • Cook down sauce to desired thickness
