Chili oil

An authentic recipe would make chili butter, however I’ve always subbed in my chili oil for a quick breakfast


In a pot, heat the following on low heat:

  • 1 cup neutral oil (canola)


In a jar / heatproof bowl:

  • 1 1/2 tbsp chili flakes
  • 1/4 -1 tsp chli powder
  • 1 tsp salt
  • Set aside


Toast the following in a dry pan

  • 1 cinnamon stick
  • 4 cardamom pods
  • 1 bay leave 
  • 2 star anise
  • 1 1/2 tbsp sichuan peppercorns

Once toasted add to oil


Let the oil slowly bubble with all the spices and infuse the oil with all the flavours for about 5 min


Let oil cool for another 5 min


Strain oil into jar/heatproof bowl


Add larger whole spices into the jar to infuse the oil as it sits int he pantry (bay leaf, star anise, cinnamon stick)
