T&T - Baklava

**Will need 1/2lb of phyllo pastry


Make Syrup

In a mediums sauce pan, add:

  • 1 cup sugar
  • 1 cup honey
  • 1 cup water

Bring to a boil and then down to a gentle simmer. Simmer until a little reduced and a bit thicker. Around 12 mins.

Once done, turn off heat and add:

  • 1 lemon sliced
  • 2 cinnamon sticks


Make filling

In a food processor add:

  • 1 1/2 cup pistachios 
  • 1/2 cup walnuts
  • 1/2 tsp ground cinnamon
  • 3 tbsp sugar

Pulse until you have small chunky crumbs and set aside



Assembly 

  • Melt 1cup unsalted butter before starting to assemble 
  • In a 9x13 baking brush the bottom and sides with butter
  • First layer (6 buttered sheets):
    • 1 sheet of phyllo pastry (if the sheet is too big you can fold it over)
    • Brush on butter (About 3tbsp) 
    • Now repeat this 6 times (the first layer will have 6 sheets of  buttered pastry)
  • Second layer (nuts):
    • Layer on 1/3 of pistachio mix
  • Third layer (4-6 buttered sheets)
    • 1 sheet of phyllo pastry
    • Brush with butter
  • Fifth layer (nuts)
  • Fourth layer (4-6 sheets of pastry)


**My pan was not 9x13, so I did it in another sheet and I made more layers of the pastry & nuts instead


Once top layer of pastry is complete, cut the pastry into diamond shape


 Place in the oven at 350 for 45 mins or until golden brown


Remove from oven and while its still warm spoon over the honey/sugar syrup *remove the lemon & cinnamon) 

*will not be using the entire syrup, use enough to hydrate the pastry. I actually didn’t use a lot (used about half and I enjoyed it. My dish was about half the size*


Ensure you spoon between the diamond slices.
