Masoor Pilau


Prep rice 

Rinse and soak 2 cup rice 


Prep lentils 

1 cup masoor

Boil in 4 cup water  for 22min until 80 to 90% cooked

Set aside


Make rice

In 8 cup water add:

  • 1/2 teaspoon black cumin
  • 1 star anis
  • 3 small bay leaves or 1 large

Set water to medium high

Once water is boiled (aroudn when putting masoor in), add

  • 2 cup rice
  • 2 tsp salt

Cook until 90% cooked



Prep the pilau

In a pot add:

  • 8 tbsp oil
  • 3 bay leaves (small)
  • 1/2 tsp black cumin
  • 4 green cardamom
  • 3 chopped medium potatoes

Fry until potatoes are 20/30% cooked

  • 1 tsp ginger paste
  • 2 tsp garlic paste 
  • 4 tbsp fried onion (or fry 1 medium in the oil)
  • 4 tbsp yogurt
  • 4 tbsp tomato puree (or 1 tomato)
  • 1 tsp red chili powder
  • 1 tsp Garam Masala powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp salt
  • 1/4 tsp Tumeric

Mix everything well

Once potatoes are 50% cooked, then add

  • Masoor 

Mix then add

  • Aloo bhukaray (dried plums)
  • 4tbsp water
  • Coriander
  • 2-3 reg or green chilies 
  • 1/4 tsp Garam Masala powder
  • 1 lime juice
  • Top masala with rice (once 90% done)
  • 2 tbsp fried onions onto of rice
  • Food colouring 
  • 1-2 tbsp oil or ghee

Lower heat

Cover and cook until rice is fully done
