Huevo Rancheros
Salsa Sauce
In a medium sauce pan, add:
- 3-4 tbsp olive oil
- 1/2 thinly sliced medium onion (yellow or spanish)
- 1/2 jalapeno, sliced thinly
Fry until fragrant, then add
- 1 tsp cumin powder
- 1/2 tsp oregano
- 1/2 tsp smoked paprika
- Salt to taste
- 1 1/2 tsp of freshly grated garlic/ginger puree
- 2-3 roma tomatoes (thinly sliced)
Cook until tomatoes soften, then add:
- 3 tsps of tomato paste
- Splash of water (continue to add as needed)
- 2 bay leaves
Cover and simmer for 5-8 mins.
Uncover and cook until desired texture is completed
Remove from heat and add
- juice of 1/2 a lime
Beans
In the same pan as the salsa, add:
- 2 tbsp of oil
- 1/2 thinly sliced medium onion (yellow or spanish)\
Fry until translucent, then add
- Salt to taste
- Pepper to taste
- Beans (black or pinto)
- Splash of water
Cook for a few mins
Add water as necessary
Use a smasher and smash the beans to your consistency, then add
- Juice of 1/2 a lime
- Zest of 1 lime
Cook until nice and thick.
Set aside
Tortilla prep
Fry corn tortilla until crispy
Set aside
Eggs
In the pan used to fry tortilla, fry eggs
Assemble
Corn tortilla
Spread beans
Spread salsa
Top with egg
Cilantro on top
