Barfi

In a non-stick pan, on medium heat, add:

  • 2 tbsp unsalted butter
  • 1 3/4 cup whipping cream

Heat and stir until mixed, then add

  • 1 1/2 cup skim milk powder

Stir and cook for 2-3 mins, then add

  • 1/4th cup of whole pistachios which are finely ground
  • 1/4 cup of sugar  

Stir and cook for 6-7 min - watch carefully, make sure it doesn’t burn

Once completed, let cool for a few mins


After 5 mins it should stick together/ pull away from the sides. Warm play dough consistency


Then transfer to parchment paper and roll into a cylinder


Wrap in parchment & refrigerate for 5-20 mins (however long you want)


Remove from fridge & slice round pieces.
