T&T - Butter Chicken

Prepare Chicken
In a bowl, mix together:
- 2 large chicken breasts (450g); cubed into bite size pieces
- 2 tbsp yogurt
- 1 tbsp chickpea flour
- 2 tbsp garlic/ginger puree
- 1 green chilli
- 1 tsp paprika
- 1/2 tsp chilli powder
- 1/2 tsp Garam Masala
- 1 tsp coriander powder
- Salt to taste
Can leave to marinate 1-2 hrs or proceed with the next steps.
Pan fry each chicken piece until golden on the outside. It does not need to be cooked through fully as it will finish in the sauce.
Once completed, set aside.
Butter Chicken Sauce
In a pot, add:
- 1 1/2 tbsp unsalted butter
- 5 green cardamoms
- 1 stick cinnamon
- 4 cloves
Sauté until fragrant, then add:
- 2 shallots (finely chopped)
Sauté until lightly golden, then add:
- 1 1/2 tbsp garlic/ginger powder
- 2 green chillies (slit length wise)
- 1/2 tsp Garam Masala
- 1 cup tomato puree (Passata or crusted tomato)
- 1/2 - 1 cup of cream (depending on the consistency and colour you prefer
- Splash of water for curry consistency
- Salt to taste
- Add chicken back in
- 2 tbsp honey
- 1-2 tsp dried kasoori methi (sun-dried fenugreek leaves)
Mix and taste for seasoning, add more of the spices above if needed.
Simmer for 5-10 mins on low heat.
Serve with naan/ sourdough bread/ or rice
