Garlic and Rosemary Roast Chicken with Gravy
Preheat oven to 400 degrees F
Chicken Rub
Mix together:
- 1/4 Cup olive oil
- 6 minced garlic cloves
- 1 tsp Italian seasoning
- 2 tbsp minced fresh rosemary
- Salt and pepper to taste
Rub mixture all over chicken including the cavity
Tie the chicken legs together with kitchen string
place chicken in roasting pan that could be used on the stove later.
Roast in the oven for 1 hour or until the thickest part of the thigh registers at 165 degrees F.
**if chicken is getting too dark and not cooked through, wrap the chicken legs/breast with foil and continue roasting.
Once cooked through, transfer to a platter.
Gravy
Place the roasting pan on the stove.
- Remove excess fat
- Add 1 1/2 cup chicken stock
Place over high heat and bring to a boil. Scrape all caramelized drippings on the bottom of the pan
- Continue to boil for two minutes
- Turn off heat and whisk in
- 1 tbsp cold unsalted butter
- Add salt/ pepper to taste
Serve gravy alongside chicken.
