Flakey Butter Biscuits

Preheat oven to 425 degrees F
In a food processor, mix in:
- 100 grams cold unsalted butter (3/4 cup plus 2 tablespoons)
Dice butter and store on a plate in the freezer.
Meanwhile mix in:
- 463 grams all purpose flour (3 cups)
- 1/4 teaspoon baking soda
- 10 grams white sugar (2.5 teaspoons)
- 8 gramskosher salt (2.5 teaspoons)
- 10 grams baking powder (2.5 teaspoons)
- Add butter until little pea size chunks are in the dough
** I do this in two batches as I have a small food processor**
Transfer to a bowl and add:
- 250 grams cold buttermilk (1 cup plus 2 tablespoons)
Forming biscuits
Mix until it comes together
Transfer to a worksurface and form into a square
Dive in 4’s and stack on top of each other
Roll out into a rectangle (about 1/2 inch thick or your preferred thickness)
Cut out squares and place onto a parchment lined baking tray leaving space between the biscuits
Place tray in oven for 5-10 mins
Baking
Once 10 mins are up, turn oven down to 400 degrees.
- Brush melted butter on top of biscuits
- optional: sprinkle with flakey sea salt on top
Place tray in oven and bake 10-15min or until golden brown on top
