Scones
*Recipe Adapted from Joshua Weissman*
Preheat oven to 415 degrees F
Dough
In a bowl, mix together:
- 425g all purpose flour
- pinch of salt
- 8g baking powder
- 4g baking soda
- 58g granulated sugar
Whisk together, then add
- 90g cold cubed butter
Mix with your hands until butter is crumbled into the dough (small pea-size butter chunks), then add
- 95g whipping cream
- 175g whole milk
Mix until dough comes together, then transfer over to a work surface and shape into a rectangular
Fold dough into a letter (flip 1/3rd of the left side into the middle, then right side into the middle)
Roll out again into a rectangle and repeat the folds once more
Repeat once more, for a total of 3 times (rolling & folding)
Roll out one final time into a rectangle until 3/4 to 1inch thick
Using a bench scraper, divide dough in half lengthwise.
On each half, angle the bench scraper 45 degrees to cut out triangles and repeat on the second half.
Place onto a parchment lined baking tray
Brush tops of scones with whipping cream
Bake 15-20 mins or until golden brown
Orange glaze:
- 75g powdered sugar
- 22g orange juice
Once scones are cool, drizzle orange glaze on top
