Karahi Chicken
Marinate Chicken (can use other meat, just marinate longer for beef/veal/goat etc)
- 2lb Chicken pieces
- 2 1/2 tbsp karahi masala
- 2 tbsp garlic ginger paste
Let marinate for 15 minutes
To a hot pot/wok add:
- Oil - quite a bit.. 1/4 to 1/3 cup
- Marinated chicken
- Stir fry for a while
- Add splash of water as needed to keep chicken from sticking to the pot.
- 3-4 diced tomatoes
- 1 tsp salt
- Cook until tomatoes are soft & water is about dried up
- Add 2 green chillies (sliced lengthwise)
Garnish with cilantro & ginger julienne
Karahi Masala
Roast & grind into a powder:
- 4 tbsp whole coriander seeds
- 2 tbsp whole cumin seeds
- 1 tbsp maithi
- 1 tbsp black pepper
- 1 tbsp Kashmiri red chilli powder
Mix with above:
- 1 tbsp red chilli powder
- 1/2 tsp citric acid (preservative)
- 1 tbsp salt
- 1 tbsp garam masala
- 1 tsp haldi
