Karahi Chicken

Marinate Chicken (can use other meat, just marinate longer for beef/veal/goat etc)
  • 2lb Chicken pieces
  • 2 1/2 tbsp karahi masala
  • 2 tbsp garlic ginger paste
Let marinate for 15 minutes

To a hot pot/wok add:
  • Oil - quite a bit.. 1/4 to 1/3 cup
  • Marinated chicken
  • Stir fry for a while
  • Add splash of water as needed to keep chicken from sticking to the pot. 
  • 3-4 diced tomatoes
  • 1 tsp salt
  • Cook until tomatoes are soft & water is about dried up
  • Add 2 green chillies (sliced lengthwise)
Garnish with cilantro & ginger julienne

Karahi Masala
Roast & grind into a powder:
  • 4 tbsp whole coriander seeds
  • 2 tbsp whole cumin seeds
  • 1 tbsp maithi
  • 1 tbsp black pepper
  • 1 tbsp Kashmiri red chilli powder
Mix with above:
  • 1 tbsp red chilli powder
  • 1/2 tsp citric acid (preservative)
  • 1 tbsp salt
  • 1 tbsp garam masala
  • 1 tsp haldi
