Avacado Egg Rolls
In a bowl mix:
- 1 large ripe avocados (chunks)
- 3-4 sundried tomatoes
- 1/2 red onion (diced)
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/2 tsp cumin powder
- Pinch of black pepper
Once everything is mixed thoroughly, wrap in egg roll wrappers
Fry until golden brown
Serve with sweet chilli Thai sauce
